Fruits were evaluated every 10 days interval for one month (15 October to 15 November). The results showed that Cook eureka fruit with 131.04 g weight, 60.84 mm length, 115.12 mm3 volume and 39.22 percentage of juice was significantly larger than Lisbon. The highest amount of titratable acidity of varieties (13.51 and 10.95 percent in Lisbon and Cook eureka, respectively) observed at late October. Technological Index of varieties was the range of 3.40- 4.51 percent. The highest amount of pulp phenolics observed with 1.85 mg.g-1 at late October and 1.48 mg.g-1 at early November in Lisbon and Cook eureka, respectively. Ascorbic acid content of Lisbon lemon was high (57.05 mg.100g-1) at early November. Inversely, Cook eureka showed exceeding antioxidant activity with 65.33 % at mid November. In addition, the lowest amount of total chlorophyll in peel and pulp of Lisbon was 0.69 (early November) and 0.42 mg.g-1 (late October), respectively. The amount of total carotenoid (6.85 mg.g-1 at late October) in Lisbon was higher than other examined varieties. Cook Eureka) طی رسیدن}, abstract_fa = {در این پژوهش از میوه‌ی دو رقم لیموترش (لیسبون و کوک‌اورکا) جهت مطالعه تغییر ترکیب‌های زیست‌فعال و ویژگی‌های فیزیکوشیمیایی میوه طی مراحل رشدی بلوغ تا رسیدن استفاده شد. میوه‌های هر رقم به‌فاصله‌ی زمانی هر 10 روز یک‌بار طی یک ماه (24 مهر تا 27 آبان) برداشت و ارزیابی شدند. نتایج نشان داد که میوه‌ی کوک‌اورکا با میانگین وزن 04/131 گرم، طول 84/60 میلی‌متر، حجم 12/115 میلی‌متر مکعب و عصاره کل 22/39 درصد به‌طور معنی‌داری درشت‌تر از میوه‌ی لیسبون بود. بیش‌ترین مقدار اسید قابل تیتراسیون در هر دو رقم در اوایل آبان (لیسبون با مقدار 51/13 و کوک‌اورکا با مقدار 95/10 درصد) مشاهده شد. مقدار شاخص تکنولوژی در هر دو رقم در دامنه‌ی 40/3 تا 51/4 درصد قرار داشت. بیش‌ترین مقدار فنل‌کل گوشت در رقم لیسبون در اوایل آبان (مقدار 85/1 میلی‌گرم بر گرم) و در رقم کوک‌اورکا در اواسط آبان (مقدار 48/1 میلی‌گرم بر گرم) مشاهده شد. رقم لیسبون در اواسط آبان با مقدار 05/57 میلی‌گرم بر 100 گرم بیش‌ترین مقدار آسکوربیک‌اسید را دارا بود. بیش‌ترین مقدار فعالیت آنتی‌اکسیدانی در رقم کوک‌اورکا و در اوایل مهر (با مقدار 33/65 درصد) مشاهده شد. کم‌ترین مقدار کلروفیل‌کل در پوست و گوشت لیسبون به‌ترتیب با مقادیر 69/0 (اواسط آبان) و 42/0 میلی‌گرم بر گرم (اواخر آبان) اندازه‌گیری شد. رقم لیسبون بیش‌ترین مقدار کاروتنوئیدکل پوست (با مقدار 85/6 میلی‌گرم بر گرم در اوایل آبان) را داشت. بنابر این میوه‌ها قبل از شروع متابولیسم داخلی یا پس از رسیدگی کامل دارای حداکثر میزان ترکیب‌های زیست فعال بودند.}, keywords_fa = {آنتی‌اکسیدان,رسیدن,لیموترش,مرکبات}, url = {https://plant.ijbio.ir/article_1134.html}, eprint = {https://plant.ijbio.ir/article_1134_dd11e7d05a374ffe1bcbdd32826eb858.pdf} }
